Spring Pressed Sugar Cookies

These are melt in your mouth, butter soft, sugar cookies. And the nice part is that there is no need for royal icing cause they have the cutest floral print on them! You won't belive how easy they are to make. I'm like kinda obsessed with them now and i'm already thinking of what design I can make next!

Yields- 12-15 cookies

Ingredients

360 g all purpose flour (3 cups)

3/4 tsp baking powder

1/4 tsp salt

1 cup unsalted butter - room temp

200 g granulated sugar (1 cup)

1 egg

1 tbs vanilla

gel based food colors (at least 4-5 different colors)

small flower cookie cutter

round piping tip or straw

Square or round cookie cutter

Instructions:

  1. Add dry ingredients (besides sugar) to a large bowl. Set aside
  2. Beat butter and sugar in large bowl or stand mixer. Beat until light and fluffy.
  3. add egg and vanilla extract. Mix until combined.
  4. With the mixer on low, add the flour mixture. Do not overmix.
  5. Form the dough into a disc and cover it with plastic wrap. Refrigerate for at least 1 hour.
  6. Take about 1/4 of the dough and set the rest covered and aside.
  7. Divide that 1/4 amount into how many colors you plan to use. I did 5 colors. Add a drop of food color to each portion and combine the color using your hand. I suggest using gloves for this portion. 
  8. Once all the colors are mixed in place them in a row on top of parchment paper. Set another piece of parchment paper over it and roll out the dough.
  9. Use your flower cookie cutter to cut out flowers and use the piping tip to cut out circles in the center of the flowers. You may need to rechill your dough if it becomes too soft while you are cutting them out. Set all the flowers and the circles aside.
  10. Roll out the large portion of dough you previously set aside. Do not roll it too thin it should be 1/8"- 1/2". 
  11. Place the flowers all over the rolled dough and add the circles to them. Be sure to mismatch the colors. Place a sheet of parchment paper above them and use a tray to flatten them out. 
  12. Using your larger round or square cookie cutter cut out the cookies. Re-roll any extra dough you may have and repeat the process. 
  13. Place them on a parchment lined baking tray at least 2" apart from each other. Chill the cookies in the fridge for 10-15 minutes.
  14. preheat oven to 350 degrees F. Bake cookies for 10-14 minutes. This really depends on the size of cookie cutter you used. You will know when the cookies are ready when they are golden brown on the edges.
  15. Remove from oven. Let them cool and top with edible glitter and enjoy :)
